My iphone got a bath in a different time zone and thus I now have a watch with no phone (until I replace phone). Watch is 3 time zones behind now. I can only adjust by 59 minutes. Must the watch always be paired with the phone? Cant believe that. Help!!

For most things, yes. Changing the time zones one of those things. Take it to a local Apple Store. Perhaps they can help.
You can use the World Clock app on your Apple Watch. Use it to check the time in a city in your time zone or to add a city to your watch face.
